Ethiopia Yirgacheffe

KOKE WASHING STATION Located just on the outside edges of Yirgacheffe town, Koke washing station has 10 fermentation tanks to process cherry that is brought by local small holder farmers to them. In the Gedeo zone, the area has great growing conditions as well as being notorious for producing classic ‘Ethiopian’ coffee. The reputation is bolstered by the first washing station in Ethiopia being in Yirgacheffe, introduced back in the 1970’s. Coffee is typically grown on a very small scale in the gardens of producers, where it is intercropped with other subsistence crops such as Enset, a crop low in vitamins and minerals, but calorie dense. This is often on a small plot of land adjacent to the home; the area has just 7.74% of it’s population as living in urban settings. For the first time, we proudly present this coffee with a unique, fully naturally - processed washing process. This method enhances the captivating winey tasting notes and bestows a deep, luxurious body to the brew, making it the perfect choice for this time of year and the festive Holiday season. What's more, it proudly carries the prestigious Grade 1 Ethiopian classification, making it an exceptional choice for those who appreciate the finest in their daily cup. In the southern region of Ethiopia, farmers pick coffee selectively, harvesting only ripe cherries individually by hand. Pickers rotate among the trees every eight to ten days, choosing only the cherries which are at peak ripeness. Wolisho, Dega and Kudhume are three varietals that grow locally in the Gedeo Zone. Kudhume has a small bean size and is known for disease resistance, also popular in the Guji. Dega sits in the middle with average bean size and tree height, whilst Wolisho (Walichu) exhibits a larger bean size.
