CASCADA DE BORDONES This season we offer an exceptional Colombian coffee originating from The Regional Association La Cascada de Bordones Co-op, named after the renowned Bordones waterfall, a popular destination in the region. The farmers demonstrate meticulous attention to detail and prioritize quality in their cultivation practices. A fully washed lot, this coffee is grown in the department of Huila at an altitude ranging from 1650-1900 masl, where it is later patio dried. Founded in 2008 in the south of Huila, this group of smallholder farmers had been implementing practices consistent with organic farming for years before deciding to consolidate as Las Cascadas de Bordones, to better sell their coffee in the international market. With twenty hectares of coffee between them from an average property size of 1.5 hectares, the 60 members partake in sustainable crop management projects that are organized once a month which are constantly monitored. The association's moniker draws inspiration from Huila's Bordones waterfall, renowned for its stunning scenery. The term "Huila" originates from the Páez indigenous language, translating to "luminous mountain," likely due to the diverse topography of the area. Huila's climate is shaped by numerous snow capped volcanoes in the Andes, enriching the soil with valuable minerals. Furthermore, the Magdalena River valleys attract tropical air from the Caribbean, resulting in exceptional growing conditions and distinct microclimates. This coffee offers a captivating blend of blackberry and cranberry notes, intertwined with the sweetness of dried fruit and rich undertones of chocolate, creating a fusion of fruity and chocolatey flavors.
